Ingrédients

• 80g de banane ou 70g de tôfu soyeux
• 50g de sucre / Sirop d'érable
• 30 mL de Mirin (ou d'eau)
• 1 càc de jus de citron
• 2 càc d'huile végétale

• une petite moitié de càc de bicarbonate de sodium

Étapes

1. En fonction de la base :
   • Pour le tofu, mixer les 6 premiers ingrédients (en gras) avec les 120mL d'eau jusqu'à ce que çe soit lisse et mettre dans un saladier.
   • Pour la banane, bien la réduire en purée et mélanger aux autres ingrédients en gras dans un saladier.
2. Ajouter la farine, la poudre à lever et le bicarbonate. Mélanger à la spatule, puis couvrir avec une assiette et laisser 15 minutes au frigo.
3. Après repos, la pâte aura peut-être besoin d'un peu d'eau en plus pour faire de beaux pancakes. (j'ai ajouté 15mL)
4. Mettre une poële sur un feu doux-moyen, pas plus pour ne pas brûler les pancakes avant qu'ils ne soient cuits au centre.
5. Graisser le fond de la poëlle et faire cuire les pancakes :
   • 3 minutes sans toucher (jusqu'à voir de petite bulles éclater) et retourner
6. 1 minutes de l'autre côté.
7. Laisser refroidir sur une grille
8. Étaler de l'anko sur un pancake froid et le couvrir d'un autre. Servir coupé en deux.
